Creamy Pesto Pasta with Cherry Tomatoes

12 oz (340 g) pasta of choice (e.g., fettuccine, penne)

1 cup fresh basil leaves

1/4 cup pine nuts (toasted)

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon lemon juice

Salt and pepper to taste

Extra Parmesan and fresh basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, garlic, Parmesan cheese, and a pinch of salt. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until a smooth paste forms. Add lemon juice and blend to incorporate. Adjust seasoning with salt and pepper to taste.

      Create the Creamy Base: In a large skillet over medium heat, add the heavy cream. Allow it to simmer gently for about 3-4 minutes, stirring occasionally until slightly thickened.

        Combine Pesto and Cream: Add the prepared basil pesto to the cream in the skillet. Stir well until combined and heated through. If the mixture is too thick, gradually add reserved pasta water until the desired consistency is reached.

          Add Pasta: Toss the cooked pasta into the skillet with the creamy pesto sauce. Mix well to coat all the pasta evenly.

            Incorporate Tomatoes: Gently fold in the halved cherry tomatoes, cooking for an additional 2-3 minutes until the tomatoes are warmed but still holding their shape.

              Season and Serve: Taste before serving and adjust the seasoning with more salt, pepper, or lemon juice if needed. Plate the pasta and garnish with extra grated Parmesan and fresh basil leaves.
