Creamy Pasta Salad

2 cups rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup sweet corn (canned or frozen, thawed)

1/2 red onion, finely chopped

1 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup fresh cilantro, chopped (or basil for a twist)

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta cools, prepare the vegetables. In a medium bowl, combine the halved cherry tomatoes, diced cucumber, red bell pepper, sweet corn, and chopped red onion.

      Make the Dressing: In a separate large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth and creamy. Taste and adjust seasoning if necessary.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the dressing. Follow by adding the prepared vegetables and chopped cilantro. If using, sprinkle the grated Parmesan cheese on top.

          Toss & Chill: Gently toss all ingredients together until well combined and coated in the creamy dressing. Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld.

            Serve: Before serving, give the pasta salad another gentle toss. Garnish with additional cilantro or herbs if desired, and enjoy chilled!
