Ingredients

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, packed

1 cup vegetable broth

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon (about 2 tablespoons)

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes, for a spicy kick

Instructions

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain it and set aside, reserving about 1/2 cup of the pasta water.

Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook, stirring frequently, until wilted (about 2-3 minutes). Season lightly with salt and pepper.

Make the Sauce: Pour in the vegetable broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer, allowing it to cook for another 3-4 minutes until slightly thickened.

Combine Ingredients: Add the cooked orzo to the skillet with the sauce, tossing to fully incorporate. If the mixture is too thick, gradually stir in some reserved pasta water until reaching your desired creaminess.

Add Flavor: Stir in the lemon zest, lemon juice, and grated Parmesan cheese. Mix well and adjust seasoning with salt, pepper, and red pepper flakes if using.

Serve: Remove the skillet from heat and garnish the creamy orzo with chopped parsley before serving. Enjoy it warm as a delightful main dish or a side!
