2 cups cooked rice (white or brown)

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 cup sliced mushrooms (button or cremini)

2 cloves garlic, minced

1 small onion, diced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Prepare the Chicken: Season both chicken breasts with salt, pepper, and paprika. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
