8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened

1 cup whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon mustard powder

1/4 teaspoon cayenne pepper (optional, for a bit of heat)

Salt and black pepper, to taste

1/2 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a muffin tin or use silicone cups for easy removal.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions, usually about 7-8 minutes. Drain and set aside.

      Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until bubbly.

        Add Milk and Cream Cheese: Gradually whisk in the whole milk, followed by the cream cheese. Stir continuously until the mixture is smooth and begins to thicken, about 3-4 minutes.

          Cheese Time: Remove from heat and stir in the shredded cheddar cheese until fully melted and creamy.

            Season It Up: Add garlic powder, onion powder, mustard powder, cayenne pepper, salt, and black pepper to taste. Adjust seasoning as needed.

              Combine Pasta and Sauce: In a large bowl, combine the cooked elbow macaroni with the cheese sauce, mixing until all pasta is well-coated.

                Fill the Cups: Spoon the mac and cheese mixture into the prepared muffin tin or silicone cups, filling each one about 3/4 full.

                  Breadcrumb Topping: In a small bowl, mix breadcrumbs with a little melted butter and sprinkle over the top of each mac and cheese cup for added crunch.

                    Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden and crispy.

                      Cool and Serve: Allow the mac and cheese cups to cool for a few minutes before gently removing them from the tin. Garnish with chopped parsley before serving.
