2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup cherry tomatoes, halved

1 cup fresh spinach

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed. Remove from heat and let sit, covered, for an additional 5 minutes. Fluff with a fork.
