Ingredients

1 cup Greek yogurt (preferably full-fat)

1 medium cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon red wine vinegar or fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Optional: a pinch of cayenne pepper for a hint of heat

Instructions

Prepare the Cucumber: Start by grating the cucumber using a box grater or a food processor. Place the grated cucumber in a clean kitchen towel or cheesecloth, and squeeze out as much excess moisture as you can. This step is crucial to prevent the tzatziki from becoming watery.

Mix the Base: In a medium-sized mixing bowl, combine the Greek yogurt, finely minced garlic, olive oil, and red wine vinegar (or lemon juice). Stir thoroughly until all the ingredients are well-blended.

Add the Cucumber and Herbs: Fold in the grated cucumber and chopped dill into the yogurt mixture. Ensure that everything is evenly incorporated.

Season to Taste: Add salt and pepper according to your preference. If you like a bit of spice, incorporate a pinch of cayenne pepper for an extra kick. Taste the mixture and adjust seasoning as necessary.

Chill: Cover the bowl with plastic wrap and refrigerate the tzatziki for at least 30 minutes to let the flavors meld.

Serve: Serve chilled alongside warm pita bread, fresh vegetables, or as a zesty sauce for grilled meats.
