Creamy Greek Pasta Bake

12 oz penne pasta

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1 cup spinach, chopped

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

1 cup feta cheese, crumbled

1 cup Greek yogurt

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent. Add the minced garlic and cook for an additional minute.

        Add Remaining Vegetables: Stir in the cherry tomatoes, bell pepper, spinach, oregano, basil, and red pepper flakes. Cook for another 3-5 minutes, until the vegetables are softened. Season with salt and pepper to taste.

          Combine Ingredients: In a large bowl, combine the cooked pasta, sautéed vegetables, crumbled feta cheese, and Greek yogurt. Stir well to ensure all ingredients are evenly mixed.

            Assemble Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly on top.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
