Creamy Garlic Spinach Ravioli

12 oz fresh or frozen spinach ravioli

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese (plus extra for serving)

1 teaspoon lemon zest

¼ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups fresh spinach leaves

Fresh basil leaves, for garnish

Instructions
 

Cook the Ravioli: Bring a large pot of salted water to a boil. Add the spinach ravioli and cook according to package instructions until al dente (typically about 3-5 minutes). Drain and set aside, reserving about ½ cup of the pasta cooking water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant and golden, being careful not to burn it.

      Make the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and lemon zest, letting the cheese melt into the cream. Mix well until the sauce is smooth.

        Season the Sauce: Add the red pepper flakes (if using), and season with salt and pepper to taste. Let the sauce simmer for about 3-4 minutes until it slightly thickens.

          Add Spinach: Stir in the fresh spinach leaves and cook for 1-2 minutes until they wilt into the sauce.

            Combine Ravioli with Sauce: Gently add the cooked ravioli to the skillet, tossing in the creamy garlic sauce. If the sauce is too thick, gradually add some of the reserved pasta water until desired consistency is reached.
