Ingredients

1 large head of cauliflower, cut into florets

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 teaspoon red pepper flakes (optional, for some heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, minced garlic, salt, black pepper, and oregano until well coated.

Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and lightly browned, stirring halfway through to ensure even roasting.

Make the Creamy Sauce: While the cauliflower is roasting, combine the heavy cream, grated Parmesan cheese, and red pepper flakes (if using) in a saucepan over medium heat. Stir continuously until the cheese has melted and the mixture becomes smooth and creamy. Remove from heat.

Assemble the Bake: Once the cauliflower is roasted, reduce the oven temperature to 375°F (190°C). In a baking dish, combine the roasted cauliflower and the creamy cheese sauce. Mix well until all the florets are coated. Top with shredded mozzarella cheese.

Bake: Place the baking dish in the oven for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
