Ingredients

2 cups snap peas, trimmed and halved

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/4 cup fresh dill, finely chopped

1/2 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1/4 cup crumbled feta cheese

Instructions

Prepare the Snap Peas: In a pot of boiling water, blanch the snap peas for 2 minutes until vibrant green. Immediately transfer them to a bowl of ice water to stop the cooking process. This will keep them crisp and bright. Drain and set aside.

Mix the Dressing: In a medium bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth and creamy.

Combine Ingredients: In a large salad bowl, combine the blanched snap peas, cherry tomatoes, red onion, and fresh dill. If you’re using feta cheese, fold it in gently.

Dressing the Salad: Pour the creamy dressing over the salad mixture. Toss everything together until all the ingredients are evenly coated with the dressing.

Chill and Serve: For enhanced flavors, cover the salad and let it chill in the refrigerator for about 30 minutes. Serve cold as a refreshing side dish or light lunch.
