Creamy Corn and Zucchini Soup

2 medium zucchinis, diced

3 cups fresh or frozen corn kernels

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh basil or cilantro, for garnish (optional)

Juice of 1 lime (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Vegetables: Stir in the diced zucchini and corn. Cook for about 5 minutes, stirring occasionally, until the zucchini is slightly tender.

      Pour in Broth: Add the vegetable broth and thyme to the pot. Bring to a gentle simmer and let it cook for 15-20 minutes, until the zucchini is completely soft and the corn is tender.

        Blend the Soup: Remove the pot from the heat and use an immersion blender to purée the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until creamy.
