1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 packet taco seasoning (about 1 oz)

1 cup chicken broth

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips or tortillas, for serving

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
