Creamy Chicken and Spinach Skillet Pasta

8 oz (about 225g) penne pasta

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

2 cups baby spinach, chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

      Add Garlic and Spinach: In the same skillet, lower the heat to medium and add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, then add the chopped spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes soften.

        Make the Sauce: Pour in the heavy cream and stir. Bring the mixture to a gentle simmer. Add the grated Parmesan cheese and Italian seasoning. Stir until the cheese is melted and the sauce is creamy. Season with additional salt and pepper to taste.

          Combine Everything: Add the cooked pasta and sautéed chicken back into the skillet. Toss well to coat the pasta and chicken with the creamy sauce.

            Serve and Garnish: Serve hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.
