8 ounces penne pasta

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 pound boneless, skinless chicken breasts, diced

1 teaspoon Italian seasoning

Salt and pepper, to taste

5 ounces fresh baby spinach

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese, divided

2 cups shredded mozzarella cheese

1/2 teaspoon red pepper flakes (optional)

Fresh basil, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Chicken: Add the diced chicken breasts to the skillet. Season with Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Stir in the fresh spinach and cook until wilted, about 2 minutes.

        Make the Cream Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer and cook for 3-4 minutes until slightly thickened. Add 3/4 cup of the grated Parmesan cheese and stir until melted and smooth. If desired, add red pepper flakes for a kick.
