Creamy Chicken and Broccoli Rice Casserole

2 cups cooked rice (white or brown)

1 pound boneless, skinless chicken breasts, diced

3 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup cream of chicken soup (or homemade)

1 cup sour cream

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Chicken: In a skillet over medium heat, add a drizzle of olive oil. Cook the diced chicken for about 6-8 minutes, or until no longer pink in the center. Season with salt, pepper, garlic powder, onion powder, and paprika. Once cooked, remove from heat and set aside.

      Blanch the Broccoli: If using fresh broccoli, bring a pot of water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to an ice bath to stop cooking. If using frozen, simply thaw and drain excess water.

        Mix the Base: In a large mixing bowl, combine the cooked rice, cooked chicken, blanched broccoli, cream of chicken soup, sour cream, and chicken broth. Fold in half of the shredded cheddar cheese. Make sure everything is well mixed and seasoned to taste.

          Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Spread it evenly to ensure an even bake.

            Prepare the Topping: In a small bowl, combine the panko breadcrumbs with olive oil and the remaining cheddar cheese. Mix well until the breadcrumbs are evenly coated.

              Top & Bake: Sprinkle the breadcrumb mixture over the casserole, distributing it evenly. Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and bubbly.
