Ingredients

8 oz penne pasta

1 lb chicken breast, diced

2 cups fresh broccoli florets

1 tablespoon olive oil

3 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Reserve ½ cup of pasta water, drain, and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and sauté until cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Prepare the Broccoli: In the same skillet, add the broccoli florets and cook for 2-3 minutes until vibrant green but still crisp. Stir in the minced garlic and cook for another minute until fragrant.

Make the Sauce: Pour in the chicken broth, followed by the heavy cream. Add the Italian seasoning and red pepper flakes (if using). Stir well and bring to a simmer.

Combine Ingredients: Return the cooked chicken to the skillet, then add the drained pasta and Parmesan cheese. Stir everything together until well combined, and cook for an additional 2-3 minutes. If the mixture is too thick, gradually add some reserved pasta water until the desired creaminess is reached.

Serve: Taste and adjust seasoning with additional salt, pepper, or Parmesan cheese as desired. Garnish with fresh chopped parsley before serving.
