Creamy Cheesy Cauliflower Rice

1 large head of cauliflower (about 2-3 pounds)

1 cup grated sharp cheddar cheese

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/2 cup unsweetened almond milk (or any milk of choice)

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Instructions
 

Prep the Cauliflower: Remove the leaves and stem from the cauliflower and chop it into florets. Rinse the florets under cold water and drain well.

    Rice the Cauliflower: Using a food processor, pulse the cauliflower florets until they resemble rice, being careful not to over-process. You can also grate the florets using a box grater if you prefer.

      Sauté the Cauliflower Rice: In a large skillet, heat the olive oil over medium heat. Add the riced cauliflower, minced garlic, onion powder, garlic powder, salt, and pepper. Sauté for 5-7 minutes, stirring occasionally, until the cauliflower is tender.

        Make it Creamy: Lower the heat to medium-low and add the softened cream cheese to the cauliflower. Stir well to combine until melted. Gradually pour in the almond milk while continuously stirring to achieve a creamy texture.

          Add the Cheeses: Once the mixture is creamy, add the grated sharp cheddar cheese and grated Parmesan cheese. Stir until the cheese is fully melted and incorporated.

            Taste and Adjust: Taste the cheesy cauliflower rice and adjust seasoning with more salt and pepper if needed. If you prefer a creamier consistency, feel free to add more almond milk or cream cheese.

              Serve and Garnish: Once well mixed, remove from heat. Serve hot, garnished with fresh parsley or chives for a pop of color and flavor.
