1 large head of cauliflower, chopped into florets

1 cup sharp cheddar cheese, shredded

1/2 cup heavy cream (or milk for a lighter version)

2 tablespoons unsalted butter

2 cloves garlic, minced (optional)

Salt and black pepper, to taste

Fresh chives or parsley, for garnish (optional)

Instructions
 

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 10-12 minutes. Drain well and let cool slightly.

    Sauté Garlic (Optional): In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

      Mash the Cauliflower: Transfer the cooked cauliflower to a large mixing bowl or a food processor. Add the sautéed garlic and melted butter (if using).

        Add Cream and Cheese: Pour in the heavy cream or milk, and add the shredded cheddar cheese. Using a potato masher or food processor, blend until smooth and creamy. You can adjust the consistency by adding more cream or milk if needed.

          Season: Taste and season with salt and black pepper to your liking. Blend again to combine.
