Creamy Cauliflower Alfredo Pasta

1 medium head of cauliflower, chopped into florets

3 cups vegetable broth

2 tablespoons olive oil

4 cloves garlic, minced

1 cup unsweetened almond milk (or any milk of choice)

1/4 cup nutritional yeast

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/2 teaspoon nutmeg (optional)

12 ounces of your favorite pasta (spaghetti, fettuccine, or penne)

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for some heat)

Prepare the Cauliflower: In a large pot, bring the vegetable broth to a boil. Add the chopped cauliflower and simmer for about 8-10 minutes, until tender. Drain and set aside, reserving some broth.

    Sauté the Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 2 minutes or until fragrant, being careful not to burn it.

      Blend the Sauce: In a blender, combine the cooked cauliflower, sautéed garlic, almond milk, nutritional yeast, onion powder, garlic powder, salt, black pepper, and nutmeg. Blend until completely smooth and creamy. If necessary, add a bit of the reserved broth to achieve your desired consistency.

        Cook the Pasta: While preparing the sauce, cook the pasta according to package instructions in salted water. Once cooked, reserve a cup of pasta water, then drain and return to the pot.

          Combine Pasta and Sauce: Pour the creamy cauliflower sauce over the drained pasta. Toss to combine. If the sauce is too thick, you can add reserved pasta water, a little at a time, until you reach your desired consistency.
