Creamy Cajun Shrimp Penne

12 oz penne pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 teaspoons Cajun seasoning

1/2 teaspoon smoked paprika

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Shrimp:

        - In a large skillet over medium heat, add olive oil. Once hot, add the shrimp and season with salt, pepper, Cajun seasoning, and smoked paprika.

          - Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set them aside.

            Sauté the Vegetables:

              - In the same skillet, add the chopped onion, garlic, and diced bell peppers. Sauté for about 5-7 minutes until the vegetables are tender.

                Make the Sauce:

                  - Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for about 3-4 minutes until it thickens slightly.

                    Combine Everything:

                      - Return the cooked shrimp to the skillet and add the grated Parmesan cheese. Stir everything together until the cheese melts and the shrimp are coated nicely in the sauce.

                        - Add the cooked penne pasta to the skillet and toss until the pasta is well-coated in the creamy Cajun sauce.

                          Serve:

                            - Taste and adjust seasoning with more salt, pepper, or Cajun seasoning if needed. Garnish with freshly chopped parsley before serving.
