Creamy Broccoli Cheddar Quinoa

1 cup quinoa, rinsed

2 cups vegetable broth

2 cups fresh broccoli florets

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon nutmeg (optional)

Fresh parsley or chives for garnish (optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and the liquid is absorbed. Remove from heat and let it stand covered for 5 minutes, then fluff with a fork.

    Prepare the Broccoli: While the quinoa is cooking, bring a small pot of water to a boil. Add the broccoli florets and blanch for about 3 minutes until they are bright green and tender-crisp. Remove them and immediately plunge into ice water to stop the cooking process. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Combine Ingredients: Lower the heat and add the cooked quinoa to the skillet with the onion and garlic. Stir to combine. Mix in the cream cheese, and once melted, add the shredded cheddar cheese until it’s creamy and smooth. If the mixture seems too thick, add a splash of vegetable broth to loosen it.

          Add Broccoli: Gently fold in the blanched broccoli, salt, black pepper, paprika, and nutmeg (if using). Cook for an additional 2-3 minutes, allowing all ingredients to meld together and the broccoli to heat through.

            Taste and Adjust: Give the dish a taste. Adjust seasoning as necessary, adding more salt or pepper if desired.

              Serve: Spoon the creamy broccoli cheddar quinoa into bowls or onto plates. Garnish with fresh parsley or chives if desired. Enjoy warm!
