Creamy Baked Penne with Spinach & Alfredo

12 ounces penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup whole milk

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper. Remove from heat and set aside.

        Make Alfredo Sauce: In a separate saucepan, combine heavy cream, whole milk, ½ cup of Parmesan cheese, onion powder, garlic powder, and a pinch of salt and pepper. Cook over medium heat, stirring frequently until the cheese has melted and the sauce thickens slightly, about 5-7 minutes.

          Combine Ingredients: In a large mixing bowl, combine cooked penne, sautéed spinach, and Alfredo sauce. Mix until all the pasta is coated in the creamy sauce.

            Assemble the Bake: Transfer the pasta mixture into a greased 9x13-inch baking dish. Sprinkle the remaining 1½ cups of mozzarella cheese and the remaining ½ cup of Parmesan cheese evenly over the top.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
