1 cup quinoa or brown rice

2 cups vegetable broth or water

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, halved and pitted

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1 cup romaine lettuce, chopped

1/2 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh cilantro, for garnish

For the Creamy Avocado Ranch Dressing:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

1 tablespoon ranch seasoning mix

1 tablespoon lime juice

Salt and pepper, to taste

Water, as needed to thin the dressing

Cook the Base: In a medium saucepan, combine the quinoa (or rice) and vegetable broth (or water). Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes (or until quinoa is fluffy and water is absorbed). Remove from heat and let it rest for 5 minutes before fluffing with a fork.

    Prepare the Dressing: In a blender or food processor, combine the avocado, Greek yogurt, ranch seasoning mix, lime juice, salt, and pepper. Blend until smooth. Add water gradually until you reach your desired consistency. Set aside.

      Assemble the Bowls: In serving bowls, start with a base of the cooked quinoa (or rice). Layer on the black beans, corn, diced bell pepper, cherry tomatoes, and red onion.

        Add Lettuce: Top the assembled base with fresh chopped romaine lettuce.
