2 ripe avocados

2 cups cooked pasta of your choice (spaghetti or fusilli work well)

1 cup fresh basil leaves, packed

2 cloves garlic, minced

1 tablespoon lemon juice (freshly squeezed)

1/4 cup extra virgin olive oil

Salt and freshly cracked black pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a kick)

1/4 cup grated Parmesan cheese (optional, for serving)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: Start by boiling a pot of salted water and cook your pasta according to the package instructions. Reserve about 1/2 cup of pasta water before draining.

    Prepare the Avocado Sauce: While the pasta is cooking, halve the avocados and scoop the flesh into a food processor. Add the fresh basil leaves, minced garlic, lemon juice, and olive oil. Season with salt, black pepper, and red pepper flakes (if using).

      Blend Until Smooth: Process the mixture until smooth and creamy. Add reserved pasta water, a tablespoon at a time, to achieve your desired consistency for the sauce.
