12 oz (340g) spaghetti or your favorite pasta

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, packed

2 tablespoons lemon juice

1/4 cup extra virgin olive oil

1/4 tsp red pepper flakes (optional)

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (optional for non-vegans)

Cherry tomatoes, halved (for garnish)

Additional basil leaves (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Avocado Sauce: In a food processor or blender, combine the ripe avocados, minced garlic, fresh basil, lemon juice, and olive oil. Blend until smooth.

      Adjust Texture: If the sauce is too thick, gradually add the reserved pasta water, one tablespoon at a time, until you reach your desired creaminess.

        Season the Sauce: Stir in the red pepper flakes (if using) and season with salt and black pepper to taste.

          Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta with the avocado sauce, tossing until the pasta is evenly coated.

            Serve: Plate the creamy avocado pasta and top with grated Parmesan cheese (if desired), halved cherry tomatoes, and additional basil leaves for garnish.
