Creamy Avocado Chicken Salad

2 cups cooked chicken, shredded or diced

1 ripe avocado, mashed

1/4 cup Greek yogurt (or mayonnaise for a richer taste)

1 tablespoon Dijon mustard

1 tablespoon lime or lemon juice

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1/4 cup celery, finely chopped

1/4 cup fresh cilantro or parsley, chopped

Salt and pepper to taste

Optional: 1/2 teaspoon garlic powder or fresh garlic, minced

Instructions
 

In a large mixing bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, and lime or lemon juice. Mix until it's smooth and creamy.

    Add the shredded chicken to the bowl, followed by the chopped red bell pepper, red onion, celery, and cilantro/parsley. Mix gently until everything is well coated in the creamy avocado mixture.

      Season the salad with salt, pepper, and garlic powder (if using), adjusting to taste. Stir until well combined.
