2 cups cooked chicken, shredded or diced (preferably rotisserie chicken)

1 cup fresh or dried cranberries

1/2 cup sliced almonds, toasted

1/2 cup celery, finely chopped

1/4 cup red onion, finely diced

1/2 cup mayonnaise (or Greek yogurt for a healthier version)

1 tablespoon Dijon mustard

1 tablespoon honey (optional, for a touch of sweetness)

1 tablespoon apple cider vinegar

Salt and pepper to taste

Prepare the Chicken: If not using rotisserie chicken, cook your chicken breasts in boiling water or in a skillet until fully cooked, then allow to cool and shred into bite-sized pieces.
