2 cups all-purpose flour

1 cup rolled oats

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup almond flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsweetened applesauce

1/2 cup Greek yogurt (plain)

1/4 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 cup fresh or frozen cranberries, chopped

1/2 cup sliced almonds, plus extra for topping

Zest of 1 orange

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, brown sugar, granulated sugar, almond flour, baking powder, baking soda, salt, and ground cinnamon until well combined.

      Combine Wet Ingredients: In another bowl, mix the applesauce, Greek yogurt, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined; be careful not to over-mix. The batter will be thick.

          Add Fruits and Nuts: Fold in the chopped cranberries, sliced almonds, and orange zest until evenly distributed throughout the batter.

            Pour into Pan: Transfer the batter into the prepared loaf pan. Smooth the top with a spatula and sprinkle additional sliced almonds on top for decorative crunch.

              Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
