2 large eggs

1/4 cup red bell pepper, finely diced

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika (optional for extra flavor)

Prepare the Mixture: In a large mixing bowl, combine the corn kernels, flour, eggs, milk, Parmesan cheese, green onions, red bell pepper, baking powder, salt, black pepper, and smoked paprika. Mix until just combined; the batter should be slightly lumpy.

    Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. To check if the oil is ready, drop a small spoonful of the batter into the oil; it should sizzle immediately.

      Fry the Fritters: Using a tablespoon, scoop portions of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown and crispy.
