Ingredients

8 oz (225g) rotini or fusilli pasta

1 can (5 oz or 140g) tuna in olive oil, drained and flaked

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup black olives, sliced

1/4 cup frozen peas (thawed)

1/4 cup fresh parsley, chopped

1/4 cup mayonnaise

2 tablespoons plain yogurt

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool completely.

Prepare the Dressing: In a small bowl, whisk together the mayonnaise, yogurt, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until smooth and well combined. Adjust seasoning to taste.

Combine Ingredients: In a large mixing bowl, combine cooled pasta, flaked tuna, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, peas, and parsley. Toss gently to mix without breaking the tuna too much.

Add the Dressing: Pour the dressing over the pasta and vegetable mixture. Gently fold everything together until the pasta is evenly coated with the dressing.

Chill: Cover the salad with plastic wrap or place it in an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.

Serve: Give the salad a gentle stir before serving. Taste and adjust seasoning if needed. This can be served on a bed of greens or on its own. Enjoy your refreshing Cold Tuna Pasta Salad!
