8 oz (225 g) cream cheese, softened

1 cup (240 ml) heavy whipping cream

½ cup (60 g) powdered sugar

1 teaspoon vanilla extract

1 cup (150 g) fresh strawberries, hulled and diced

½ cup (50 g) graham cracker crumbs

2 tablespoons melted butter

Additional strawberries for topping

Fresh mint leaves for garnish (optional)

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

    Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

      Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture until fully combined, taking care to retain the lightness of the whipped cream.

        Mix Strawberries: Stir in the diced strawberries, ensuring they are evenly distributed throughout the cheesecake mixture.

          Prepare the Crust: In a small bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated.
