Cold Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups rotini or fusilli pasta

2 cups cooked chicken breast, shredded or diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/3 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Juice of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper until well combined. Set aside.

      Combine the Ingredients: In a large mixing bowl, add the cooked pasta, shredded or diced chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley, and basil.

        Dress the Salad: Pour the dressing over the pasta mixture, tossing gently until all ingredients are well coated.

          Chill: Cover the pasta salad and place it in the refrigerator for at least 30 minutes to allow the flavors to meld together. For best results, chill for 1-2 hours.
