Cold Lemon Basil Pasta Salad

Ingredients
  

8 oz. pasta (fusilli or farfalle works best)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup fresh basil leaves, torn

1/3 cup olive oil

Zest and juice of 2 lemons

2 cloves garlic, minced

1/2 tsp salt

1/4 tsp black pepper

1/2 cup feta cheese, crumbled (optional)

1/4 cup pine nuts, toasted (optional)

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, salt, and black pepper until emulsified. Adjust seasoning to taste.
