1 lb large shrimp, peeled and deveined

1 cup coconut milk

1/3 cup fresh lime juice (about 3 limes)

2 tablespoons lime zest

2 tablespoons honey or agave syrup

2 garlic cloves, minced

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper (optional for heat)

1 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, for garnish

Lime wedges, for serving

Skewers (wooden or metal)

Instructions
 

Marinate the Shrimp: In a large bowl, whisk together the coconut milk, lime juice, lime zest, honey, minced garlic, ground coriander, cayenne pepper, salt, and black pepper to create the marinade. Add the shrimp and stir to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare Skewers: If you're using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat. You want it hot enough to give the shrimp a nice char.

        Assemble Skewers: Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.

          Grill the Shrimp: Place the skewers on the grill. Grill for 2-3 minutes on each side or until the shrimp turn pink and opaque, brushing with additional marinade halfway through if desired.

            Garnish and Serve: Remove the skewers from the grill and transfer to a serving plate. Garnish with fresh cilantro and serve with lime wedges on the side.
