1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup coconut milk

Zest of 2 limes

1/4 cup fresh lime juice (about 2 limes)

2 tbsp honey

2 tbsp soy sauce (or tamari for gluten-free)

2 cloves garlic, minced

1 tbsp fresh ginger, minced

1/2 tsp red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 cup shredded coconut (sweetened or unsweetened)

Fresh cilantro, for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to grilling)

Instructions
 

Marinade Prep: In a large mixing bowl, combine the coconut milk, lime zest, lime juice, honey, soy sauce, minced garlic, ginger, red pepper flakes, salt, and black pepper. Whisk together until well blended.

    Marinate Chicken: Add the chicken cubes to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap or transfer to a resealable bag. Marinate in the refrigerator for at least 1 hour, but ideally 4 hours or overnight for better flavor.

      Preheat Grill: Preheat your grill to medium-high heat (about 375°F to 400°F / 190°C to 200°C).

        Skewering: Remove the marinated chicken from the refrigerator. Thread the chicken pieces onto the skewers, leaving a small gap between each piece for even cooking.

          Coconut Coating: Place the shredded coconut on a large plate. Gently roll each skewer of chicken in the coconut, pressing lightly to ensure the coconut adheres.

            Grill Chicken: Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is fully cooked (internal temperature should reach 165°F / 75°C) and the coconut is golden brown.
