Ingredients

For the Meatloaf:

1 lb ground beef (or a mix of beef and pork)

1 cup breadcrumbs (or crushed crackers)

1/2 cup grated Parmesan cheese

1/2 cup finely chopped onion

1/2 cup milk

2 large eggs

2 cloves garlic, minced

2 tablespoons Worcestershire sauce

2 tablespoons ketchup (plus extra for glaze)

1 teaspoon dried thyme

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

For the Mashed Cauliflower:

1 head of cauliflower, cut into florets

2 tablespoons unsalted butter

1/4 cup sour cream or cream cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions

Prepare the Meatloaf Mixture:

    - In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan, chopped onion, milk, eggs, minced garlic, Worcestershire sauce, ketchup, dried thyme, salt, and black pepper. Mix everything until well combined, but be careful not to overmix.

      Shape the Meatloaf:

        - Preheat your oven to 350°F (175°C). Transfer the meat mixture into a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper. Spread a thin layer of ketchup on top for a flavorful glaze.

          Bake the Meatloaf:

            - Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing to allow the juices to redistribute.

              Prepare the Mashed Cauliflower:

                - While the meatloaf is baking, steam the cauliflower florets in a pot until fork-tender, about 10-12 minutes. Drain well and transfer to a mixing bowl.

                  Mash the Cauliflower:

                    - Add the butter, sour cream (or cream cheese), grated Parmesan, salt, and pepper to the steamed cauliflower. Using a potato masher or immersion blender, mash until smooth and creamy. Adjust seasoning if needed.

                      Serve the Dish:

                        - Slice the meatloaf and serve alongside the creamy mashed cauliflower. Garnish both the meatloaf and mashed cauliflower with fresh parsley and chives for a pop of color.
