Classic Baked Chicken Cordon Bleu

Ingredients
  

4 boneless, skinless chicken breasts

4 slices of ham (preferably black forest or honey ham)

4 slices of Swiss cheese

1 cup of all-purpose flour

2 large eggs

1 cup of breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons of Dijon mustard

2 tablespoons of butter, melted

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a baking dish with a little cooking spray or butter.

    Prepare the Chicken: Place a chicken breast between two sheets of plastic wrap or parchment paper. Gently pound with a meat mallet or rolling pin until about 1/2 inch thick. Repeat with the remaining chicken breasts.

      Assemble the Cordon Bleu: On each flattened chicken breast, layer a slice of ham and a slice of Swiss cheese. If desired, spread a thin layer of Dijon mustard on top of the cheese for added flavor. Roll the chicken tightly, starting from one end, and secure with toothpicks or baking twine if necessary. Repeat with all chicken breasts.

        Prepare the Breading Stations: Set up three shallow bowls: one with flour seasoned with salt, pepper, garlic powder, onion powder, and paprika; one with beaten eggs; and one with breadcrumbs.

          Bread the Chicken: Dredge each rolled chicken breast in the flour mixture, shaking off excess, then dip into the egg, and finally coat evenly with breadcrumbs. Place the breaded chicken rolls seam-side down in the prepared baking dish.

            Add Butter: Drizzle the melted butter over the top of the chicken rolls for added richness and golden color during baking.

              Bake: Cover the dish with aluminum foil to keep the chicken moist, and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the coating is golden brown.

                Serve: Allow the chicken to rest for 5 minutes before removing toothpicks. Slice each roll into medallions, and garnish with fresh parsley before serving.
