1 cup canned pumpkin puree

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan (9x5 inches) or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk together until the mixture is smooth and the ingredients are well incorporated.

      Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt. Make sure there are no lumps and that the spices are evenly distributed.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients. Gently fold the mixture with a spatula until just combined. Be careful not to overmix, as this can lead to a dense loaf.

          Add Nuts and Other Mix-ins: If using, fold in the chopped walnuts or pecans and raisins or chocolate chips into the batter.
