1/2 cup all-purpose flour

1/2 cup cornmeal

1/3 cup chopped fresh cilantro

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/2 teaspoon baking powder

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten

1/4 cup milk (or buttermilk for added richness)

Oil for frying (vegetable or canola oil)

Prepare the Mixture: In a large mixing bowl, combine the corn kernels, flour, cornmeal, cilantro, red onion, garlic, baking powder, cayenne pepper, salt, and black pepper. Stir until the dry ingredients are well mixed with the corn and veggies.

    Add Wet Ingredients: In a separate bowl, whisk together the beaten egg and milk. Pour this mixture into the bowl with the dry ingredients. Gently fold everything together until just combined. Be careful not to over-mix; it’s okay if there are a few lumps.
