1 cup fresh corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup fresh cilantro, chopped

2 green onions, finely sliced

1/2 tsp baking powder

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp chili powder (optional for heat)

1/2 cup buttermilk (or regular milk)

1 large egg, beaten

Prepare the Batter: In a large mixing bowl, combine the flour, cornmeal, baking powder, ground cumin, salt, black pepper, and chili powder. Stir to combine well.

    Add Wet Ingredients: In a separate bowl, whisk together the buttermilk and the beaten egg. Pour this mixture into the dry ingredient bowl and mix until just combined.

      Fold in the Corn and Herbs: Gently fold in the corn kernels, chopped cilantro, and sliced green onions into the batter. Be sure not to overmix; it's okay if there are a few lumps.

        Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom (about 1/4 inch deep) and heat it over medium heat until shimmering.

          Fry the Fritters: Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

            Drain the Fritters: Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil. Sprinkle with a little extra salt if desired.
