Ingredients

For the Lava Cake:

½ cup (1 stick) unsalted butter

6 oz semi-sweet chocolate, chopped

¼ cup granulated sugar

2 large eggs

2 large egg yolks

1 tsp vanilla extract

¼ cup all-purpose flour

¼ tsp salt

For the Peanut Butter Filling:

½ cup creamy peanut butter

2 tbsp powdered sugar

1 tsp vanilla extract

For Garnish:

Powdered sugar, for dusting

Fresh berries or ice cream, for serving

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four ramekins (6 oz size) with butter or cooking spray and dust with cocoa powder.

Prepare the Peanut Butter Filling: In a small bowl, mix together the peanut butter, powdered sugar, and vanilla extract until smooth. Divide the mixture into four equal portions and roll each into a ball. Place them in the freezer for about 15 minutes to firm up.

Melt the Chocolate and Butter: In a medium saucepan, melt the butter and chopped chocolate over low heat, stirring frequently until smooth. Remove from heat and let it cool slightly.

Add the Sugars and Eggs: Whisk in the granulated sugar until well combined. Then add the eggs and egg yolks, one at a time, whisking until fully incorporated. Stir in the vanilla extract.

Combine Dry Ingredients: Sift the flour and salt into the chocolate mixture and fold gently until just combined. Do not overmix.

Fill the Ramekins: Spoon a layer of the batter into each greased ramekin (about halfway full). Place a frozen peanut butter ball in the center of each, then cover with more batter until each ramekin is filled to just below the rim.

Bake the Cakes: Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft and jiggly.

Cool and Serve: Remove from the oven and let the cakes sit for 1-2 minutes. Carefully run a knife around the edges of the ramekins to loosen the cakes. Invert onto individual plates. Dust with powdered sugar and serve with fresh berries or a scoop of vanilla ice cream.
