Chocolate Chip Banana Oat Bars

1 ripe banana, mashed

1 cup rolled oats

1/2 cup almond flour (or any flour of choice)

1/4 cup honey or maple syrup

1/4 cup peanut butter (or almond butter)

1/2 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips

1/4 cup chopped walnuts or pecans (optional)

1/2 tsp cinnamon (optional)

Instructions
 

Preheat & Prep: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper for easy removal.

    Mix Wet Ingredients: In a large bowl, combine the mashed banana, almond flour, honey (or maple syrup), peanut butter, and vanilla extract. Mix until the ingredients are well incorporated and you have a smooth mixture.

      Combine Dry Ingredients: In another bowl, stir together the rolled oats, baking powder, salt, and cinnamon (if using).

        Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.

          Add Chocolate & Nuts: Fold in the dark chocolate chips and chopped nuts (if using) into the batter.

            Transfer to Pan: Pour the mixture into the prepared baking pan, spreading it evenly with a spatula.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

                Cool & Slice: Once done, allow the bars to cool in the pan for about 10 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack. Once cooled, slice them into bars.

                  Serve & Enjoy: These delicious bars can be enjoyed right away, or stored in an airtight container for a quick snack or breakfast option throughout the week.
