8 rice paper wrappers

1 cup cooked vermicelli noodles

1 cup cooked shrimp, halved (or tofu for a vegetarian option)

1 cup shredded purple cabbage

1 medium carrot, julienned

1 cucumber, julienned

1 avocado, sliced

1 cup fresh mint leaves

1 cup fresh basil leaves

1 cup fresh cilantro leaves

1/4 cup hoisin sauce (for dipping)

2 tablespoons peanut butter (optional, for sauce)

1 tablespoon rice vinegar (optional, for sauce)

Salt and pepper to taste

Prepare the Ingredients: Start by cooking the vermicelli noodles according to package instructions. Drain and rinse under cold water. Prepare all the vegetables (purple cabbage, carrot, cucumber, and avocado) by washing and cutting them into appropriate sizes.

    Soak the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5 seconds or until it softens. Be careful not to over-soak, as it will become too fragile.

      Assemble the Rolls: Lay the softened rice paper on a clean surface or a plate. In the center, layer a small handful of vermicelli noodles, a few pieces of shrimp (or tofu), and a mix of shredded veggies (cabbage, carrots, and cucumbers). Add a slice of avocado, and a few leaves of mint, basil, and cilantro.

        Roll It Up: Begin rolling the rice paper from the bottom up, folding the sides in as you go to secure the filling. Roll tightly until the entire roll is closed. Repeat this process for the remaining ingredients.

          Make the Dipping Sauce: In a small bowl, combine hoisin sauce with peanut butter and rice vinegar (if using). Mix well until smooth. Adjust the consistency by adding a bit of water if desired.
