For the Chili Lime Chicken:

4 boneless, skinless chicken breasts

3 tablespoons olive oil

Zest and juice of 2 limes

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, for garnish

For the Avocado Salsa:

2 ripe avocados, diced

1 small red onion, finely chopped

1 medium tomato, diced

1 small jalapeño, seeded and minced (optional)

Juice of 1 lime

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped

Marinate the Chicken: In a large bowl, combine olive oil, lime zest, lime juice, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat well. Cover and refrigerate for at least 30 minutes or up to 2 hours.

    Prepare Avocado Salsa: While the chicken is marinating, in a medium bowl, mix the diced avocados, red onion, tomato, jalapeño (if using), lime juice, salt, pepper, and chopped cilantro. Gently toss to combine. Taste and adjust seasoning as needed. Set aside.
