Chili Garlic Tofu Stir-Fry

400g firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil (divided)

4 cloves garlic, minced

2 tablespoons fresh ginger, minced

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, thinly sliced

1 cup snap peas

2 tablespoons chili garlic sauce (adjust to taste)

1 tablespoon sesame oil

2 teaspoons rice vinegar

1 tablespoon sugar (optional)

2 green onions, chopped

Sesame seeds for garnish

Cooked rice or noodles for serving

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, combine soy sauce and cornstarch, then gently toss the tofu cubes in the mixture until evenly coated.

    Cook the Tofu: Heat 2 tablespoons of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes in a single layer and cook for about 5-7 minutes, turning occasionally until golden and crispy. Remove from the pan and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of oil. Once hot, add minced garlic and ginger. Sauté for approximately 30 seconds until fragrant, being careful not to burn.

        Stir-Fry Vegetables: Add the sliced bell pepper, broccoli florets, carrot, and snap peas to the pan. Stir-fry for around 4-5 minutes until the vegetables are tender-crisp.

          Add Sauce and Tofu: Return the crispy tofu to the pan. In a small bowl, mix together chili garlic sauce, sesame oil, rice vinegar, and sugar. Pour the sauce over the tofu and vegetables, tossing everything together to coat evenly. Cook for another 2-3 minutes to heat through.

            Finish and Serve: Remove the pan from heat and sprinkle chopped green onions on top. Serve the stir-fry over cooked rice or noodles, garnished with sesame seeds.
