Cherry Tomato Puff Tartlets

1 sheet of puff pastry (thawed if frozen)

2 cups cherry tomatoes, halved

1 cup goat cheese, crumbled

1 tablespoon olive oil

1 teaspoon balsamic vinegar

2 cloves garlic, minced

Fresh basil leaves, for garnish

Salt and freshly ground black pepper, to taste

1 egg (for egg wash)

Instructions
 

Preparation of Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into small squares, approximately 4 inches by 4 inches, and place them on a parchment-lined baking sheet.

    Creating Borders: Using a sharp knife, score a smaller square about ½ inch from the edge of each pastry square, being careful not to cut all the way through. This will create a border for the tartlet.

      Toss the Tomatoes: In a bowl, combine the halved cherry tomatoes, olive oil, balsamic vinegar, minced garlic, salt, and pepper. Toss well to coat the tomatoes evenly.

        Filling the Tartlets: Spoon the cherry tomato mixture into the center of each puff pastry square, being sure not to exceed the edges of the scored border. Crumble the goat cheese evenly over the tomatoes.

          Egg Wash: Beat the egg in a small bowl and brush the edges of the tartlet borders with the egg wash. This will give the puff pastry a beautiful golden color when baked.
