4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked quinoa (or rice)

1 cup shredded mozzarella cheese (plus extra for topping)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley or basil for garnishing (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them cut-side up in a baking dish.

      Cook the Turkey Filling:

        - In a large skillet, heat the olive oil over medium heat.

            - Add the ground turkey, breaking it up with a spatula, and cook until browned (7-8 minutes).
