Cheesy Turkey and Broccoli Stuffed Potatoes

4 large russet potatoes

1 cup cooked ground turkey (seasoned with salt and pepper)

1 cup steamed broccoli florets (chopped)

1 cup cheddar cheese (shredded)

1/2 cup cream cheese (softened)

1/4 cup sour cream

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a kitchen towel. Prick each potato several times with a fork and rub them with olive oil and a sprinkle of salt. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

      Prepare the Filling: In a large mixing bowl, combine the cooked ground turkey, chopped steamed broccoli, cheddar cheese, cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

        Stuff the Potatoes: Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a lengthwise slit on top of each potato and gently scoop out some flesh with a spoon, making room for the filling (leave enough potato on the sides to maintain the structure).

          Combine and Fill: Add the scooped potato flesh to the turkey and broccoli mixture, stirring gently to combine. Spoon the filling back into the hollowed-out potatoes, mounding them slightly on top.

            Top with Cheese: If desired, sprinkle a little extra cheddar cheese on top of each stuffed potato.

              Bake Again: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once out of the oven, allow them to cool slightly. Garnish with fresh parsley if desired, and serve warm.
