Cheesy Turkey and Broccoli Rice Casserole

2 cups cooked brown rice

1 lb ground turkey

2 cups fresh broccoli florets

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1 cup low-sodium chicken broth

1 cup sour cream

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

1 cup panko breadcrumbs

2 tablespoons olive oil

Optional: chopped fresh parsley for garnish

Instructions
 

Preheat your oven: Preheat your oven to 350°F (175°C).

    Cook the turkey: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add chopped onion and garlic, sautéing for about 3-4 minutes until fragrant and translucent. Add the ground turkey, breaking it up with a spatula. Season with salt, pepper, thyme, and paprika. Cook until turkey is browned and fully cooked through, about 6-8 minutes.

      Steam the broccoli: While the turkey is cooking, bring a pot of water to a boil. Add the broccoli florets to a steamer basket, place over the boiling water and steam for 3-4 minutes until bright green and just tender. Remove and set aside.

        Mix ingredients: In a large mixing bowl, combine the cooked brown rice, cooked turkey mixture, steamed broccoli, chicken broth, and sour cream. Stir in half of the cheddar cheese.

          Transfer to baking dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom. Sprinkle the remaining cheddar cheese over the top.

            Prepare the topping: In a small bowl, mix the panko breadcrumbs with the remaining olive oil. Stir to coat the breadcrumbs, then sprinkle evenly over the casserole.

              Bake: Place the casserole in the oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

                Garnish and serve: Remove from the oven and let it cool for a few minutes. If desired, sprinkle with fresh parsley before serving.
