1 lb ground turkey

3 cups fresh broccoli florets

1 cup uncooked brown rice

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup plain Greek yogurt

1 cup breadcrumbs (optional topping)

2 tablespoons olive oil

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the Brown Rice: In a medium saucepan, bring 2 cups of chicken broth to a boil. Add the brown rice, cover, and reduce heat to low. Cook for about 45 minutes or until the rice is tender and all the broth is absorbed. Set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until the onion is translucent.

        Cook Turkey: Add the ground turkey to the skillet, breaking it up with a spoon. Sprinkle with paprika, thyme, salt, and pepper. Cook for about 5-7 minutes until the turkey is browned and fully cooked.
